Description:

We’re hiring a Baker Trainee to support our overnight bread production — ideal for someone who enjoys quiet work, early hours, and the satisfying rhythm of night baking. You’ll begin by supporting early morning prep — scaling ingredients, cracking eggs, and measuring flour to precise specifications. You’ll assist in mixing doughs, folding batters, and learning how different ingredients behave under heat and time. You’ll be trained to shape loaves, rolls, and boules with consistency, following production schedules and house recipes. You’ll help monitor baking times and temperatures, rotating trays and adjusting settings under supervision. You’ll support glazing, decorating, and finishing items like croissants, tarts, muffins, or specialty breads. You’ll learn how to operate mixers, ovens, proofers, and cooling racks safely and efficiently. You’ll assist in maintaining a clean, allergen-controlled workspace and logging batches to track consistency and safety. You’ll learn how to prep café-style treats like banana bread, cinnamon rolls, and lemon bars that match the mood of the space.

Basic Qualifications:

• Measure and mix ingredients accurately, adjusting formulas as needed for consistency or scale.
• Stay current on baking trends, seasonal flavors, and decorating techniques.
• Keep cool under pressure when juggling multiple timers, orders, or adjustments.
• Comply with allergen labeling and handle cross-contamination risks carefully.
• Be prepared to lift heavy bags of ingredients and stand for long periods during production.

Preferred:

• Knowledge of dough handling, fermentation, shaping, scoring, and baking techniques for different types of products.
• Able to clean equipment, follow closing procedures, and prep for the next day’s production.
• Comfortable handling both sweet and savory baked items across various product categories.
• Wants to grow into roles like Head Baker, Pastry Chef, or Bakery Manager.
• Understands the importance of timing, temperature, and ingredient freshness in baking success.
