Description:
We’re hiring a Baker Trainee to support our overnight bread production — ideal for someone who enjoys quiet work, early hours, and the satisfying rhythm of night baking. You’ll begin by learning how to work with specialty flours like almond, oat, rice, and buckwheat while avoiding cross-contamination. You’ll be trained to follow house recipes carefully while still leaving room for creativity and personal touch. You’ll be trained in measuring ingredients precisely and understanding how substitutions affect texture, rise, and flavor. You’ll learn how to monitor proofing conditions, adjust humidity and temperature, and prepare trays for optimal rise. You’ll support glazing, decorating, and finishing items like croissants, tarts, muffins, or specialty breads. You’ll assist with decorating pastries and arranging baked goods in the display case in an appealing, inviting way. You’ll assist with keeping the prep area clean, labeled, and stocked — from flour bins to icing bags. You’ll be taught how to wrap, store, and present baked goods for the front counter or delivery.
Basic Qualifications:
- Be prepared to lift heavy bags of ingredients and stand for long periods during production.
- Keep cool under pressure when juggling multiple timers, orders, or adjustments.
- Maintain a clean, organized, and sanitary workstation in compliance with food safety standards.
- Stay current on baking trends, seasonal flavors, and decorating techniques.
- Coordinate with team members to divide tasks and keep the workflow smooth during busy hours.
Preferred:
- Familiar with operating mixers, ovens, proofers, dough sheeters, and other baking equipment safely and efficiently.
- Values consistency, creativity, and craftsmanship in every batch.
- Thrives in fast-paced, hands-on environments where precision and timing are key.
- Can work independently or take direction in a bakery, café, hotel, or commissary kitchen.
- Understands the shelf life and storage requirements for different baked goods.
